Chili, Rocket & Parmesan Spaghetti
Cook Berconia Spaghetti as per Cooking Instructions. Drain. Heat oil in a non-stick frying pan over medium heat. Add garlic, chillies and lemon rind and cook for 1-2 minutes or until light golden. Toss with the lemon juice, rocket, pasta, Parmesan, salt and pepper. Serve immediately top with the Parmesan cheese. Serves 3.
Macaroni with Mediterranean- Style Vegetables
Cook Berconia Macaroni as per Cooking Instructions. Allow to cool and transfer to a bowl. Slice the eggplant, tomato, olives and ham into strips and add to the pasta. Shaved ham can be separated into small pieces. Whisk together sweet chilli sauce, vinegar, oil and salt and pepper, to taste, until well combined. Drizzle the dressing over the pasta and vegetables and toss well. Serve scattered with the fresh parsley. Serves 6.
